BAKED SALMON WITH GARLIC, CILANTRO, AND TOMATOES

 


Jalapeno chile, seeded, medium---------------------------- 1/2
Garlic clove, medium-------------------------------------- 4
Cilantro leaves------------------------------------------- 1 Cup
Cumin, ground--------------------------------------------- 1/4 tsp
Lemon juice----------------------------------------------- 1/4 Cup
Salmon fillet--------------------------------------------- 2 Lb.
Olive oil------------------------------------------------- 2 Tbsp
Salt------------------------------------------------------
Black Pepper----------------------------------------------
Tomato, large, sliced thin-------------------------------- 1


1. Mince first three ingredients in a food processor. Add cumin and lemon juice and pulse to combine. Set aside.

2. Brush fillet with olive oil, then sprinkle with 1/2 tsp salt and 1/4 tsp pepper. Fold a 24x18-inch heavy duty aluminum foil sheet in half so that it measures 12x18 inches. Unfold. With the short edge of the foil positioned toward you, place the fillet lengthwise on the bottom half of the sheet. Spread the above mixture on the fillet, and arrange the tomato slices on top. Fold the foil to enclose salmon completely.

3. Heat oven to 400 degrees. Transfer pouch to baking sheet and bake  until salmon is firm, about 20 minutes. Check cooking time with fish scale, but increase a bit because of the moisture in the mix.
