Herb Butter for Fish

Shallots, minced--------------------------------------------- 3
Dry white wine----------------------------------------------- 3 Tbsp
Butter, unsalted--------------------------------------------- 8 Oz.
Tarragon, fresh, minced-------------------------------------- 1 Tbsp
Chives, fresh, minced---------------------------------------- 1 Tbsp
Chervil or Parsley, fresh, minced---------------------------- 1 Tbsp
Salt--------------------------------------------------------- 1/2 tsp

In a small non-aluminum saucepan combine the shallots and white wine.  Boil over high heat until the wine is reduced to about 1 tablespoon, about 2 minutes. Let cool.  Pour the cooled liquid into a food processor. Add the butter, tarragon, chives, chervil, and salt. Process, scraping down the sides once, until thoroughly blended, about 30 seconds.  Form into cylinder about 1 1/2 inch in diameter. Wrap and freeze up to 2 months.
